The pandan is a plant, and it’s used to make yummy treats perfect for cooling you down in the Hainan summer heat. The delicate, fresh flavor of pandan shows up in many Hainan dishes both sweet and savory. This special treat originates in Indonesia, and was brought to Hainan by returning Overseas Chinese, like many of the other pandan dishes now popular on the island. Traditionally, the noodles are made from a pandan and green bean flour, and the dish also includes fresh coconut milk, red beans, dates, and other tasty ingredients.

Spicy Soup Rice 辣汤饭
The spice in this soup dish popular with locals in the Qilou street area of Haikou is not chili peppers, but a healthy amount of white pepper! The pork, sea duck egg, and pickled vegetables make this cheap meal both filling and nutritious. This is how you dine in style on a budget!

Fish Tea 鱼茶
Fish tea is a bit of a misnomer - even though it’s called “tea” there’s no actual tea inside. There is fish though! Fish and rice are sealed up in a jar for about a month, during which time they ferment. This creates a very strong sour flavor, so be prepared before you try this one! Who knows, it might turn out to be your favorite!

Tayang Bachao Noodles 塔洋粑炒
When in Qionghai, schedule at least one meal to check out the unique local specialty noodles, Tayang Bachao. Thickened with cornstarch, these noodles provide a completely different mouthfeel and dining experience.

Danzhou Rice Noodle Rolls 海头猪肠馍
Rice noodle rolls are a very popular Hainan breakfast item. Filled with bits of meat or vegetables, the rolls are then eaten with soy sauce or hot sauce. The rice noodle rolls are known as 肠粉 (chángfěn) or sausage rolls, because they resemble long thin sausages. These breakfast noodles are often sold from street stalls and carts, or at local breakfast spots like 老爸茶 (lǎobàchá), or Old Dad's Tea shops, early in the morning, but can be difficult to find later in the day. The rice noodle wrapper is thin and tender, and the fillings are savory. Although the flavors of this dish are light and delicate, the noodles are surprisingly filling.
